Dear Sexy Juicers:

Update from the Valme household...

Sorry we were unable to get together this evening but we certainly understand the love and devotion that Etti completely shares to inspire so many, and it must be exhausting...

So I thought I would provide a little update on how we are doing...in short: GREAT!

We have not eaten any ‘flesh’ for 25 days (the only exception was a few slivers of Organic, free range Turkey which our eldest daughter prepared for Thanksgiving. Otherwise we eat only organic fruits, vegetables, lots of seafood and maintain our daily supply of “Etti approved” supplements. When we are in town, we go to the organic farmers market in the Grove on Saturdays and have become frequent shoppers at our nearby Whole Foods Market. Our goal is to not eat any flesh for 3 months. So far, so good. Also we have not had a cup of coffee – in 25 days, and we were true espresso/cappuccino addicts. Needless to say, no rice, no bread, no sugar (No TIRAMISU – my favorite dessert!) either. Although I did find an interesting substitute at the farmer’s market – all organic, of course.

We skin brush every day, try to do our breathing exercises and certainly appreciate what we eat and how thankful we are about life more than ever. No doubt there are daily challenges but when we take a few minutes to reflect on what we learned and lean on our inner strength, we are reminded that we can accomplish ANYTHING. Oh, and of course we try to heart hug as often as possible (not just to each other :-), but with others). Which also leads me to share this heart hug story with you.

On the Saturday morning before our final Sexy Juicing meeting and delicious organic meal served at Etti’s home, I went to our 18 year old daughter, Chanel (who like most 18 year olds can be quite a challenge) and I gave her the biggest, warmest heart hug known to mankind. After a few minutes she lifted her head, looked at me and said: “Who died?”, and I said “no one...we have been reborn”. Thank you Etti for your love and selflessness.

So our Sexy Juicer friends, we hope that you are all doing exceptionally well both physically and spiritually and that you take time to fill your love buckets...until we see you soon.

Now I know I can do anything I am ready for.

I am a sugar addict.
This I know.

I never thought I could go without processed sugar for longer than a day.

But after going through Dr. Etti's WEEK LONG juice detox -- I realized I could be happier and even have more energy.

Honestly, the first two days were from hell. The dog food was even looking good. Then I realized this was just my body getting used to no sugar!!

After that I understood why people walk on hot coals; mind over matter.

Now I know I can do anything I am ready for.

I now eat a salad a day, eat more organic and appreciate nature's sugar from a juicy apple more than a cookie.

Based on her home-made raw seed milk, Dr. Etti has created 14 different varieties of smoothies that are delicious options for replacing breakfast, lunch, snacks, or dinner whenever you need. Dr. Etti's MUFFINS Recipe

Her signature carrot and apple pulp muffins are dairy Free; gluten Free; sugar Free.

Serving: 24 medium size muffins

Pulps:
1 ½ lb carrot pulp (fiber leftovers separated by juicer)
½ lb apple pulp (fiber leftovers separated by juicer)

Dry ingredients:
1. ½ cup Hem seeds
2. ¼ cup coconut flakes
3. 1 tsp baking soda
4. 1 ½ tsp baking powder
5. 1 cup dried blueberries/cranberries/raisins (depends on your own preference)
6. Some orange zest
7. 1 ½ cup of spelt or buckwheat flour
8. 1 ½ cup of coconut or dark rye flour
9. ½ tsp of sea salt
10. 1 ¼ tsp of cinnamon

Wet ingredients:
1. 4 eggs
2. 2 tsp of vanilla extract
3. 1 cup of extra virgin coconut oil
4. 2 cup of almond milk (optional)
5. 1 ½ cup of Agave Nectar

Step 1: Mix the pulps and bake it at 360° for 15-20 minutes (convection oven*) or till they dry

Step 2: Mix all the dry ingredients above and add them to the baked pulp mix.
Make sure to break all the big clumps.

Step 3: Mix all the wet ingredients above and make the dough by mixing the pulp mix.

Step 4: Put medium size muffin baking (parchment) paper cup in the muffin tray; portion the dough and fill up the tray

Step 5: Bake at 350° for 15 minutes (convection oven*); then lower to 325° and bake for 10 minutes; then lower to 300° and bake for 5 minutes
(Use a stick to test if the inside is still moist.)

*Adjust the baking time accordingly if use a regular oven.

Sauté Japanese Yam and Vegetables on Coconut Sauce

Ingredients:
1 Japanese Yam
¼ cup of scallions or yellow onion (optional) or
3 chard leaves (or baby bock choy)
1 red or yellow bell pepper
2cups of coconut milk
1 tbsp of thyme and basil
1tbsp of rosemary
2tbsp of Thai curry paste (red)

Directions:
1. Peel and cut Japanese yam and boil in water till they are soft
2. Dice onions, scallions and yellow peppers
3. Caramelized onions and peppers in a pan with coconut oil on medium heat
4. Chop rosemary, basil and thyme. Add to the pan.
5. Add the Japanese yam to the pan; then add coconut milk and Thai curry paste until simmer.

This dish is certainly exotic yet friendly. Japanese and Thai flavors blend in so well in this dish. The star of this dish is Japanese Yam. It has always been considered a particularly nourishing food whose energy giving qualities rival that of the eel, and so, sometimes is referred to as the "eel of the mountains". It does contain a large amount of the enzyme diatase, which helps the digestion.It contains different fibers, cilium and vitamins, cures cancer of direct gut and helps at constipation.

Healthy Corn Cake

Ingredients:
2 bags of organic frozen corn
2 eggs
1 onion
2 wedges of garlic (minced)
Salt/pepper/cumin to taste
½ package of feta cheese
2 tbs of spelt flour

Directions:
Mix all ingredients in Vitamix then pour the mix into a baking pan (whatever shape you like!) and bake at 350 degrees for 30 to 45 minutes in a conventional oven or till the top is brown.

This cake is so comforting, healthy, and super easy to make! And it's loaded with fiber and protein.

POST-Detox Grocery List

Produce - first thing you should focus on is the produce section. You should have in your cart 70% fresh fruits and veggies and 20% of dairy and meats and 10% food in boxes and cans. But fruits and vegetables that are in season and I recommend that you buy ORGANIC berries and leafy greens. Every time you go shopping be a "FOOD DETECTIVE" - find one fruit and vegetables that you never tried before and buy it, experiment with it, cook it or just have it raw.

Meat - make sure that the meat your buying has NO probiotics, hormones, steroids and was NOT given grain feed. Go on line and find a farm that provides sanitary and human conditions to it's animals, and that the cows are allowed to roam and eat GRASS. Annie has meats as well.

Dairy - buy raw whole fat milk, or lightly pasteurized and very little homogenized. Wild Oats on Alton and 10th has raw milks and cheeses. Try to replace cow milk with rice milk, hemp milk or Almond milk. I make the best sesame and pumpkin milks - yhaaameee !!! Good cheeses are the raw goat, sheep and Feta.

Oil - good oils to cook with are oils that will NOT get burned when you heat it. Coconut oil and Ghee are the best alternatives in my opinion. Almond oil cal also be used for high temperatures. Olive oil should be used on top of salads. Get either FLAX seed oil or HEMP seed oil or SALBA oil to get your Essential Fatty acids.

Breads - GF - gluten free, yeast free bread - buy EZIKIEL bread in the refrigerator section. You'll find also spelt breads and other sprouted grain breads that hare tasty and good for you. Look in the refrigerator section of your health food store. DO NOT buy breads that are in plastic bags that are NOT stored in the refrigerator because it accumulates FuNGUS and BACTERIA, and then YOU become a LOAF !!

Snacks - raw nuts, dried fruits, veggie chips, corn chips, healthy bars, nut butters with crackers, raw chocolate,- 100% cacao. Make sure that your snacks and food are not GM - genetically modified, has NO -
HF - hydrogenated fats and NO MSG - monosodium Glutamate.

GET A JUICER and start juicing what ever fruits and vegetables you have at home. No need for specific recipe. Be creative and let your imagination flow.
